Chef Josh Hoeksema passed this to me. We are always talking about food, thinking about it, working it, and of course, eating it. Tony Bourdain sums up the chefs state of the union pretty well here. Hes mellowing nicely with age and getting a little more humble - he takes back handed shots at Paula Deen and Guy Fieri here, but then admits to his own snobbishness. Good for you, Bourdain. Youre growing up.
