Chefs Challenge tonight: She likes pesto with pasta. She likes seafood medley but on the side. How do you prepare the seafood medley so that the protein complements the pasta? I made the pesto...with fresh basil, garlic, lemon juice, and olive oil. Im using Raos homemade fussili pasta. The medley has fish, shrimp, squid, and scallops. I am going to cook it with a little butter and will include diced tomatoes, smoky South African paprika, and garnished with fresh cilantro. I will add a dash of Sherry to the juices and let them boil down. Hows that? This will be served with an oaky Chardonnay.
