Cherry Chocolate Drops 1/2 cup vegetable shortening 3/4 cup granulated sugar 1 large egg 1/2 tsp. almond extract 1 cup all-purpose flour 1/2 tsp. baking powder 1/2 tsp. table salt 1 cup chocolate chips 3/4 cup chopped candied red and green cherries In a large bowl using an electric mixer, beat shortening and sugar. Beat in egg and almond extract. In another bowl, combine flour, baking power and salt. Add to sugar mixture in several batches. Using wooden spoon, stir in chocolate chips and cherries. Using tablespoon, drop dough on greased cookie sheet. Bake in preheated 350* oven, 8 to 10 minutes. Cool 5 minutes in pan. Transfer to wire racks to cool completely. Store in airtight container at room temperature up to 1 week, or freeze up to 1 month. Makes about 30 cookies.
