Chicken Biryani Recipe Ingredients (serves 2) • 1 cup rice • ¼ cup, ghee • 5 whole cloves • 2 tbs cardamom • 1 ginger root grated • 2 garlic cloves grated • 1 chicken breast cut into 1 inch cubes • Salt to taste • 1 cup hot water • ¾ cup plain yoghurt • 3 bay leaves, shredded • 1 tbs, ground cumin • 1 tbs, garam Masala Directions i. Soak rice for 30 minutes in enough water to cover; then drain. ii. Melt ghee in a pan over low heat. Stir in cloves, bay leaves and onion, and cook until soft, 6 to 7 minutes. iii. Stir in ginger, garlic, yogurt, salt, gram, cumin and cardamoms and stir well. iv. Place chicken in pan. Cook for 10 to 15 minutes on medium heat, stirring occasionally and turning the chicken pieces. v. Mix in rice and mix well until all rice grains are covered with yoghurt mixture. Add water and bring to a boil. vi. Reduce heat to low, cover, and cook for 15-20 minutes. Check rice after about 12 minutes; if it is dry, add 1/4 cup water, and continue cooking. vii. Serve hot
