Chicken Florentine!! 2 Tbsp.olive oil 2 Tbsp. minced garlic 2 skinless, boneless chicken breast , cut into chunks 2 cups fresh spinach leaves 8 oz package of uncooked fettuccine noodles Parmesan, or Romano cheese Alfredo sauce: 1/2 cup butter 1 (8 ounce) package cream cheese 2 tsp. garlic powder 2 cups milk 6 ounces grated Parmesan cheese 1/8 teaspoon ground black pepper Alfredo Directions: Melt butter in a medium, non-stick saucepan over medium heat. Add cream cheese and garlic powder, stirring with wire whisk until smooth. Add milk, a little at a time, whisking to smooth out lumps. Stir in Parmesan and pepper. Remove from heat when sauce reaches desired consistency. Sauce will thicken rapidly, thin with milk if cooked too long. Chicken directions: Heat oil in a large skillet over medium high heat. Add garlic, saute for 1 minute, then add chicken chunks and cook for 6 to 7 minutes. When chicken is close to being cooked through, add spinach and saute all together for 3 to 4 minutes. In a large pot of salted boiling water, cook pasta according to package directions. Rinse under cold water and drain. Add chicken/spinach mixture to pasta, then stir in Alfredo sauce.
