Chicken Marinade Whether you have a Multibraai or not, this marinade and recipe will inspire you. Taste will improve the longer you marinade the chicken/pieces. Overnight in fridge or 2 - 4 hours at room temperature. (We use this marinade especially with the spitbasket) For every 1,2 kg chicken use the following: Juice of 2 lemons ½ t ground coriander ½ t ground cloves 1 t Chickenspice 1 t Chicken herbs 1 t Cooking oil Peri-Peri powder to taste 1 t Worcester sauce Garlic to taste Cut the chicken open through the breasts and press the legs out of the joints. Cut from the breast towards the wingpoint and fold the wing outwards. Marinade according to time available. Place chicken in hinged grid or spitbasket and grill over small flame continuing basting with remaining marinade. When meat is cooked sprinkle chicken spice or barbecue spice on both sides, Increase heat and grill until crisp. Tessa
