Chicken Pot Pie Recipe My chicken pot pie doesnt have a written recipe so I did the best I could to write one down. Just message me if you are confused about something. Also this recipe made 3 pies so keep that in mind when cooking, and you can always throw the extra filling in a big freezer bag too. Three dinners done in about an hour. Most chicken pot pies have peas but Chase despises peas so I left them out. Dont do that injustice to your pies, throw in a can of peas and your kids wont even notice! Chicken pot pie filling – Makes 3 pies Chicken 4 Large peeled and diced carrots 3 small/medium potatoes peeled (or leave skins on) and diced 1 Large onion peeled and diced 3 stalks of celery diced (don’t leave this out just bc you don’t like celery) 2 Cups (approximately) of corn (I had half a freezer bag I used up) ½ LB Fresh green beans cut (I had half a bag I used up) I Seasoned 3 boneless skinless chicken breasts and four thighs (or whatever combination of chicken you have on hand or use a rotisserie chicken), roast in oven until cooked through. I season mine with salt/pepper, thyme and garlic. Dice up cooked chicken. Definitely use some dark meat in this recipe it really adds flavor and is much juicier then all white meat. Peel carrots and potatoes, dice and boil until just tender –do not overcook. Drain In LARGE sauce pan melt 1 Cup of butter add 1 diced onion and cook until translucent. Add 1 Cup Flour to butter/onion mixture, whisk until combined. Slowly, while continuously whisking add 3 Cups Chicken Stock (broth) and 1Cup Milk. Bring to boil and then turn off heat. Add chopped celery, corn, carrots potatoes, green beans and chicken. Season mixture as desired to taste. I suggest 1Tbls salt, 1Tbls Garlic, 1Tbls Thyme, 1Tbls Pepper. For the pie, you can either make your own crust or just buy the refrigerator crust which is what I did. Cover loosely with aluminum foil and bake at 400F for about 30 -40 mins. Don’t forget to put slits in the top crust. To Freeze: DO NOT BAKE if you plan to freeze. What I did is filled two pie crust with filling and didn’t put on a top. Place in freezer (flash freeze) and once frozen take out and wrap with freezer paper and saran wrap. To cook take out 30 mins prior to baking, do not thaw completely. I left my top crusts off and plan to put biscuits on the top. So I’ll bake for about 30 mins then place biscuit halves on top and cook according to biscuit directions.
