Chicken and Dumplings 4 boneless/skinless chicken breasts or 6 thighs (remove skin) 4 celery stalks cut into about 3 pieces ½ onion 2 carrots peeled and cut into 3 pieces 2 tsp onion powder 2 Knorr Mini Garlic Cubes 2 Knorr Caldo de Pollo Cubes 2 tsp Lemon Pepper 2 packages of Pillsbury Biscuits or Bisquick Mix Salt & Pepper to taste In large pot bring 4 quarts of water to a boil, add chicken, celery stalks, onion and carrots. Cook until chicken is completely cooked. Remove celery stalks, onion and carrots and throw away. Remove cooked chicken and let cool. Meanwhile, add Knorr cubes, onion powder, lemon pepper and 1 tsp salt, let simmer until cubes are no longer seen. Shred cooled chicken and add back to pot. Simmer for about 10 - 15 minutes. Then add biscuits. If I use the Pillsbury Biscuits I tear them into pieces or if I use Bisquick mix I make small balls. Add biscuits to pot, cover and simmer, stirring occasionally for about 20-30 minutes. The broth will thicken from the biscuits and look cloudy. The biscuits will rise to the top and stick together while you are simmering which is normal, just be sure to stir occasionally to so they cook evenly and the flavors of the broth cook into them. When ready to serve add salt and pepper to taste. If I am short on time and will be gone most the day, I do this in a crockpot. Cook the chicken and veggies all day with the seasonings and cubes or about 6 hours. Then remove the veggies and chicken. Follow the same steps with shredding the chicken and adding back into the crockpot with the biscuits (dumplings). It usually takes about an hour of cooking on high setting in the crockpot once you add the biscuits. Still stir occasionally. Either method is easy. When you use the crockpot the chicken comes out more tender and usually will shred with a fork.
