Chicken and biscuits and chicken pot pies Chicken and biscuits recipe. 1) 2 large chicken breasts (2-2.5lbs total ) cubed and uncooked 2) 3 large green onions (scallions) diced including stalks. 3) 1 cup sliced fresh carrots raw 4) 3 stalks celery sliced raw 5) one large russet potato, peeled and cubed raw 6) 5 cloves of garlic diced small 7) one can cream of chicken soup 8) one can cream of celery soup 9) one can chicken broth (1 3/4 cups) 10) 1/4 cup fresh parsley chopped fine 11) 1/4 cup fresh cilantro chopped fine 12 1 cup frozen peas Combine everything in crockpot except herbs, cook on high 3 hrs or low 6 hours. Chicken should be cooked thru, add peas, herbs and salt and pepper to taste. If thickness v is an issue mix a little cornstarch with water and stir in. Turn on low and make biscuits. I just make bisquick drop biscuit but add 1 tablespoon of sugar or 1 1/2 teaspoons of truvia to the mix. Serves 8 or 4 and 4 pot pies! Chicken Pot Pies 1) equivalent of one 9 inch crust per pie. I use store bought. 2) Chicken and biscuit mixture from above I make mine in corelle cereal bowls, place bowl upside down on one 9in crust cut one inch bigger circle, roll out dough scrap until you have one bowl size top crust. Work bottom crust into bowl, fill with filling, place top crust on bowl. Pinch edge with a fork, 4 slits in the center and repeat. Cook at 350 for 20-30 minutes or until golden brown. You can also vacuum seal and freeze uncooked for a later treat.
