Chicken, fig, parma ham and ricotta salad with peanut and sesame dressing. 400gr chicken breast For the dressing 8 slices parma ham 4tbs peanut butter 4 fresh figs 1tbs sesame oil 400gr ricotta 1tbs sesame seeds Parsley ¼ tbs chilli flakes ½ tbs nutmeg 1tbs olive oil 1tbs sesame oil Salt and pepper Salad leaves of your taste Method 1. Blend the sesame oil and olive oil. Cut the chicken breast in fingers, pass through oil and grill. 2. In the meantime mix the ricotta, nutmeg and parsley and season to taste. 3. For the dressing; mix all the ingredients and if needed add some water to balance the consistency. 4. Lay the salad together with the ricotta, parma ham slices and wedges of figs. Place chicken semi-warm on salad, dress and serve.
