Chili Mac...Created by my dear friend and awesome client Michael Moore. So proud of him and his tremendous success on our program!!! This recipe has been approved by nutrition support. Serves 1 Add 2 servings of Green Veggies and 2 servings of Healthy Fat (if you have not already used it) for a complete Lean&Green Meal. Ingredients 4 oz (one serving) of Tofu macaroni noodles 5 oz of 96% lean ground beef or turkey 1 tsp White / Brown Rice Flour 1/2 cup of Almond Milk (unsweetened) 3/4 tsp Heinz Chili Sauce 1 oz of Kraft low fat Shredded Cheddar Cheese 1/2 cup Roma tomatoes, diced (optional) 1 Tbsp of bulb onions, diced (optional) ¼ tsp of Mrs. Dash Method Step 1 Season and brown meat on skillet, approx. 12 minutes. Add onion and tomatoes and cook for an additional 3 minutes. ( I did not need to use oil or cooking spray) Set aside. Step 2 Drain and rinse Tofu Macaroni. Place in skillet over medium heat and stir for 2 minutes to dry. Set aside. Step 3 Combine Rice Flour and 1/4 cup of almond milk in a small bowl. Whisk vigorously for about a minute until mixture becomes smooth and somewhat thick. Step 4 Place remaining almond milk in a small saucepan over medium heat. Wait for milk to start steaming. Step 5 Add Thick-It and milk mixture into the saucepan and whisk vigorously and continuously for about 2 minutes, or until the sauce becomes thick. (optional - Thick-It is a food and beverage thickener found in nutrition product isles) Step 6 Add shredded cheese and seasoning and stir until well incorporated. Step 7 Add tofu macaroni and heat for another 2 minutes, stirring continuously. Step 8 Add cooked ground meat and the chili sauce. Stir well. Heat to desired temperature. Remove from heat and enjoy with a salad or other vegetables to make a complete lean and green meal.
