Chocolate Coconut Chia Cookies (Also known as The 4C Cookies) Chia seed, 1/3 cup Water, 1 cup Coconut flour, 1 cup Cocao powder, 1 cup (Use unprocessed cocao, not cocoa powder.) Tapicoa starch (or arrowroot powder), ½ cup Baking soda, 1 teaspoon Honey, 1/2 cup Vanilla extract, 1 teaspoon Coconut oil, 1/2 cup Unsweetened applesauce, 1 cup Coconut flakes, 1/4 cup Dark chocolate, 3 oz or so (Not totally paleo, but really good. Chose one without soy or other additives.) 1) Mix chia seeds into water. Let soak for about 15 minutes or so until mixture is gelatinous. 2) In a large bowl, stir together coconut flour, cacao, tapioca or arrowroot and baking soda. Set aside. 3) Using blender or food processor, combine honey, vanilla, coconut oil, applesauce and chia/water mixture. 4) Pour wet mixture into dry ingredients and stir together until mixed fully. 5) Chop up chocolate bar into small bits. Stir chocolate and coconut flakes into cookie batter. 6) Form dough into ball, about 3/4″ or so in diameter and place on ungreased baking sheet. If you make them this size, you can expect to get about 70 cookies from this recipe. The cookies won’t spread so you can pack them on the baking sheet. 7) Bake at 350 for 10-15 minutes. You can tell when done as they will be less gooey and should pick up cleanly off baking sheet.
