Chocolate Mayonnaise Cake. My mom made this..very good, very rich 2 cups all purpose flour 2/3 cup unsweetened cocoa...add more if you like more chocolate 1 1/4 teaspoon baking soda 1/4 teaspoon baking powder 3 eggs 1 2/3 cups sugar 1 teaspoon vanilla extract 1 cup Hellmans or Best Food mayo (which ever side of the Continental Divide you live on..lol) 1 1/3 cup water Preheat oven 350 Combine flour cocoa baking powder and soda in small bowl mix. In large bowl, with electric mixer at high speed, beat eggs, sugar and vanilla for 3 minutes or until light and fluffy. Beat in Hellmanns or Best Foods Real Mayonnaise at low speed until blended. Alternately beat in flour mixture with water, beginning and ending with flour mixture. Pour in prepared greased and floured pans...I use a loaf pan you can do round cake or whatever. Bake 30 minutes or until toothpick is inserted and comes out clean. You do not have to ice this cake...I sprinkle it with powdered sugar, or powdered sugar mixed with cocoa. Great with large glass of Milk!!
