Chocolate Swiss Roll Serves 10 Ingredients: 100 ml Cake Flour 5 ml (1 tsp) Baking Powder Pinch of Salt 125 ml (85 g) Huletts SUGAlite 30 ml (2 tbsp) Cocoa 3 Extra Large Eggs, separated 5 ml (1 tsp) Lemon Juice 5 ml (1 tsp) Vanilla Essence Method: Sift the cake flour, baking powder, salt, Huletts SUGAlite and cocoa together. Beat the egg whites and lemon juice until stiff peaks form. Add the vanilla essence to the egg yolks and mix well. Beat the egg yolks and egg whites together. Fold the dry ingredients into the eggs and mix well. Pour the mixture into a greased and lined Swiss Roll tin and bake in a preheated oven at 200ºC for 8-10 minutes. Turn out onto a damp cloth, cut off the edges and spread with diabetic jam recipes ( Jams and Preserves or Chocolate Filling recipe) Roll up immediately and leave to cool. Lightly dust top of Swiss Roll with SUGAlite.
