Chocolate cake layered with strawberries and cream and enrobed in dark Chocolate Ganache ~ Dedicating this cake to JSS and my friend Mickys page ! Glad I made this cake yesterday so I have something to contribute here !! This is a sinfully moist and dark chocolate cake , have made this several times and swear by this butterless recipe. Have converted it into a Black Forest successfully on many occasions . This time disaster struck ! After having two perfectly baked cakes out of the oven I managed to wreck them during the transfer to a serving platter . Originally it would have been chocolate cake layered with cream and luscious strawberries and enrobed in ganache but now it was made additionally sinful by the cover up whipped cream icing ! No one is complaining in my house though ! Chocolate Cake 2 cups all-purpose flour 2 cups sugar ¾ cup cocoa 2 teaspoons baking powder 1½ teaspoons baking soda 1 teaspoon salt 1 teaspoon espresso powder 1 cup milk ½ cup vegetable oil 2 eggs 2 teaspoons vanilla extract 1 cup boiling water Whipped cream - 200 ml for icing and layering Strawberries - 200 gms Instructions Preheat oven to 180 Deg. C . Prepare two 9-inch cake pans by spraying with baking spray or buttering and lightly flouring. For the cake: Add flour, sugar, cocoa, baking powder, baking soda, salt and espresso powder to a large bowl or the bowl of a stand mixer. Whisk through to combine or, using your paddle attachment, stir through flour mixture until combined well. Add milk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter. Beat on high speed for about 1 minute to add air to the batter. Distribute cake batter evenly between the two prepared cake pans. Bake for 30-35 minutes, until a toothpick or cake tester inserted in the center comes out clean. Remove from the oven and allow to cool for about 10 minutes, remove from the pan and cool completely. Whip cream to soft peaks and sandwich both the cakes layered with cream and sliced strawberries . For the Ganache 200 gms dark chocolate 200 ml cream 1 tbsp honey Heat cream and stir in the chocolate and honey . Once the chocolate is dissolved let it sit in room temperature so it thickens to a coating consistency . Pour over the cake and let it set . Pipe cream over the cake and decorate with strawberries . Dig into a humongous slice !
