Chocolate covered Strawberries 1 lb fresh organic strawberries 6 ounces chocolate 3 ounces white chocolate (optional) Wash and throughly dry your strawberries. If you do not dry them well enough, the chocolate may have trouble sticking. Step 2 Measure out the chocolate. I used a digital food scale. Step 3 Put a small pot on your stove over high heat and add about an inch of water. Find a heat-safe bowl that you can fit over the pot so that the bottom of the bowl is above the boiling water. This will allow the steam to melt the chocolate. You can also use a bain-marie. Step 4 Stir the chocolate with a long spoon until fully melted. Steam may escape from around the bowl and burn you so you want to use a long spoon so your hand isnt above the bowl. Step 5 Dip each of the strawberries into the chocolate. Keep a small part of the top of the strawberry free of chocolate so that part of the strawberry can be seen. Step 6 Place each of the chocolate covered strawberries onto a plate topped with a sheet of wax paper. You can put this is the fridge to allow the chocolate to harden onto the strawberries. Step 7 (Optional) If you want to make your chocolate dipped strawberries look fancy for a special occasion such as Valentiness Day, you can use white chocolate to create designs onto the dark chocolate. Using the same pot as above, add some extra water if you need to and place a new bowl over the pot. Add your white chocolate. Step 8 Stir the white chocolate until fully melted. Turn off the burner. Step 9 Spoon the white chocolate into a snack-sized ziplock bag. Use a scissor to cut the smallest amount you can off of one of the bottom corners of the bag. This should make a very tiny opening. Push the white chocolate down to the corner of the bag that has the cut off tip. If the white chocolate is too hot to handle through the bag then let it cool for a minute. Then gently squeeze out the white chocolate onto the dark chocolate covered strawberries. You want a very thin line of white chocolate coming out. This will allow you to create intricate designs. For a great presentation, serve your chocolate dipped strawberries on a long slender plate lined up in a row.
