Chopped Competition #2 Mini chicken sandwiches with sauerkraut, pickled beet sauce and bacon, with a side salad- Puff pastry brushed with butter and baked, cut in halves for the sandwich. Bacon fried to a crisp and broken up into bits. Chicken cutlets placed in eggs and coated with Italian breadcrumbs, seared in pan in the leftover bacon fat for flavor, finished cooking the chicken in the oven. Chicken sliced and placed on pastry. Topped with sauerkraut and bacon. Pickled beets blended to make sauce. Sauce spooned onto sandwich. Salad made with Boston lettuce, red onions and pickled beet vinaigrette.
