Christmas Cake, it really is sooooo EASY! Heres a few of our most popular variations shared over the last 5 years as part of our Bake it Dont Buy it campaign. Recipes below in one full text as well as under each image. Fruitcake, fruitcake, fruitcake! Remember bake it dont buy it this festive season! There are several versions across our cookbook series & I have taken the time to list our most requested. All recipes posted are from our published cookbooks. Fruit Cake - Recipe from 4 Ingredients Diabetes * 1kg (2pounds) mixed fruit * 2 Cups (500ml) light peach iced tea (plain black tea also works) * 2 Cups (350g) self-raising flour Note: The amount of flour is always the same ratio as liquid, variations will impact on the density of the cake, hence with our Christmas cake we use 3 cups of liquid and 3 cups of flour for a heavier cake/consistency. In a large bowl, place the dried mixed fruit. Add the iced tea and stir well. Cover with cling film/plastic wrap and soak overnight. The next day, preheat the oven to 125c/250f. Low and slow is the trick when baking fruitcakes. Line a 20cm (9inch) springform cake tin with baking/parchment paper. Stir the flour into the fruit, and mix well to combine. Spoon into the cake tin. Bake, in the lower third of your oven for 2 and half hours or until cooked thru. Remove and leave to cool. Wrap in alfoil or place in an airtight container where this cake will keep nicely for 3-4 weeks in the fridge. NOTE: IF YOU WISH TO USE GLUTEN FREE SELF RAISING FLOUR, REMEMBER TO WEIGH IT, GF FLOURS CAN WEIGH DIFFERENTLY SO ENSURE YOU HAVE 350G IN WEIGHT IF GOING TO SUBSTITUTE. Bake for 2½ hours in the bottom of the oven or until cooked through (to test you can insert skewer, if it comes out clean its done). Remove from teh oven and let cool in the pan on a wire rack. Turn the cake out onto a serving platter and peel off the baking/parchment paper. Wrap in alfoil or place in an air tight container where this cake will keep nicely for 3-4 weeks. Caring is sharing, so bake dont buy it for a stress-free Christmas 2014. Optional: Add a shot of your favourite tipple, sherry, brandy, rum or grand marnier. Hint: Decorate as you wish with Cherries, nuts, candied ginger or as I have done with a rich chocolate ganache. Ganache recipe ( of course this does have cream so be aware if you are lactose intolerant) decorate with the suggestions above if you are.xx CHOCOLATE GANACHE 350g /12 oz. quality dark chocolate, chopped 1 cup (250ml) heavy cream 1 tbsp. dark rum (optional) Place the chocolate into a medium bowl. Heat the cream in a small saucepan over medium heat. Watching closely, bring it just to a boil. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the rum. Allow the ganache to cool slightly before pouring over the cake. Start at the center of the cake and work outward. For a fluffy frosting, allow it to cool until thick, then whip with a whisk until light and fluffy. Tip: I find the no brand bags of mixed fruit not just the cheapest but the best. Take 2 cups of left over fruit cake, break it up into a bowl, and soak with a quarter cup of rum or your favourite tipple.......hic! Let it soak and then roll into 20 cent sized balls and then place on a baking paper lined tray and finish off with a little melted white chocolate and then onto the to of the chocolate simply press in half a glazed cherry and there you go!!!
