Christmas memories...It has been a Christmas tradition for the past 12 years for Tom and I to take two breakfast casseroles to our Fuller familys house on Christmas morning so that we can share Christmas breakfast and join in the fun of seeing what Santa brought for our 4 Fuller grandkids. I made the Sausage/Egg/Cheese Casserole for Christmas Brunch at the church this morning, and it was a big hit, so I wanted to share the recipe with yall... 1 lb sausage (I used Jimmy Dean Bacon Lovers) 12 slices white bread (thin sliced) with crusts trimmed 1 cup shredded cheese, sharp 6 eggs 3 cups milk Brown sausage lightly, drain, and set aside. Trim crusts from bread and butter one side of each slice. Lay 6 slices of bread, butter side up, in the bottom of a large casserole dish. Top with 1/2 crumbled sausage pieces and 1/2 cup cheese. Repeat layers. Mix lightly beaten eggs with milk and pour over bread, sausage, cheese mixture. Use spatula to mash bread down until milk and egg mixture soaks the bread. Cover and refrigerate overnight. Bake at 350 degrees until lightly browned and set in the middle (about 45-50 minutes). Christmas Family Favorite!
