Citrus Bliss Balls 1 ½ cups blanched almonds, macadamias or brazils (or a mix) 2 ½ cups shredded coconut ½ cup dried apricots (sliced) 8 Medjool dates, pitted a pinch of salt 1 1/2 tablespoons honey or maple syrup 6-8 drops of stevia zest of 1 lemon zest of 1 orange juice of 1 lemon (use zested one above) 1. Place 1½ cups of coconut (keep remainder aside) and all remaining ingredients in a food processor and blitz until the mixture is well combined and forms a clump of dough mixture. Scrape down the sides of the food processor as necessary to make sure everything is well blended together. 2. Roll tablespoons of the mixture into balls then roll in the reserved coconut, coating the balls well. Store in an airtight container in the fridge. They are best eaten within a few days, but will keep for 5 - 6 days. May be frozen. ENJOY!
