City Chicken BBQ Casserole 2 lbs boneless porkchops, cut into bite size cubes 2 tbsp vegetable oil 1/4 c. chopped onion 2 cloves garlic, chopped 2 c. water 2 c. instant white rice 2 c. shredded Mozzarella cheese Sauce: 1 c. ketchup 1 bottle (12 oz) Chili sauce 1/2 c. packed brown sugar 2 tbsp honey 1 tbsp Worcestershire sauce 1 tbsp hot pepper jelly with red jalapenos 1 tsp ground ginger 1/2 curry powder 1/4 tsp black pepper 1 tsp liquid smoke(optional) Preheat oven to 350 In a large skillet, brown pork in oil on all sides til no longer pink. Add onion and garlic. Cook til onions are tender, drain. Meanwhile, in small pan, bring water to a boil. Stir in rice, cover. Remove from heat let stand 5 mins. or til water is absorbed. In a separted pan combine sauce ingredients: bring to a boil. Cook for 10 mins in a 2 1/2 qt. dish. combine pork, rice and sauce. Mix well. Bake for 15 to 20 mins. Top with cheese and bake for 5 mins more. ( City Chicken or Pork City chicken is a tranitional dish in Ohio and PA. name indicates that chicken was once more expensive then pork or veal, so the cheaper cuts were prepared to taste like chicken)
