Vanilla Custard Squares 4 egg whites, room temperature (cracked into small mixing bowl) 4 egg yolks, room temperature (cracked into large mixing bowl) 1 tsp vanilla extract 3/4 cup granulated Swerve, Truvia or Stevia 1/2 cup melted butter 3/4 cup almond flour 2 cups lukewarm almond milk (should be able to stick your finger in it and hold it there comfortably) powdered Confectioners sugar & berries for garnish Preheat oven to 325 F degrees. Grease an 8-inch x 8-inch baking dish. Separate eggs putting whites into a small mixing bowl and yolks into a large mixing bowl. Use an electric beater and beat whites until very stiff then set aside. Clean beaters then use the electric beater to beat the yolks with the sugar until creamy and light. Add melted butter and vanilla extract then beat for another two minutes. Slowly mix in the flour until batter is smooth. Slowly start adding the milk and beat until everything is well mixed together. It will be really frothy. Add the egg whites all at the same time and gently whisk it in. Pour this (watery) batter into baking dish and bake for between 40 to 70 minutes, or until the top is lightly golden. The baking time could vary greatly depending on the oven, so take a peek at around 40 minutes and see how it looks. Mine took 45 minutes. Remove from oven and place on cooking rack. Allow to cool completely in the pan. Cut into 16 squares, and dust with powdered sugar.
