Easy Broccoli Cheddar Soup Ingredients 3 cups vegetable stock 2 cups chopped broccoli (I used frozen florets but fresh works well too) 1 cup diced onion (1 small onion) 1 can evaporated milk (15 oz) 2 cups cheddar cheese, shredded (I used Sharp and shredded from a block) Directions Add all the ingredients to a saucepan. Stir together. Cook over medium-high heat for about 5 minutes, do not boil or the soup will curdle. Then reduce heat to low. Cover and simmer for about 15 minutes, making sure to stir occasionally. Once the onion is soft, it’s ready to eat. Season to taste, I just added a bit of black pepper on top! Makes about 3 servings. **Feel free to send me a FRIEND REQUEST or FOLLOW ME.
