Clients often tell me they dont have time for proper lunches; too many meetings, lectures and appointments. Always running from one thing to the next. Here are a few quick suggestions. A little prep is required ahead of time but the nutrients will set you up for an afternoon of achievement rather than sluggishness: - wash and chop veggies the night before, then add tuna and pecans before serving - a spelt wrap toasted with ricotta, spinach, avocado and miso paste - grated beetroot, carrot, sweet potato and lettuce tossed with 2 hard boiled eggs, fresh lemon juice and tahini paste - premade quinoa tossed with rocket, last nights roasted veggies and mixed seeds - mixed berries and/or poached fruit, yogurt, cacao nibs and almonds - choc mint lunch smoothie (spinach, fresh mint, frozen banana, hemp protein, cacao powder, unsweetened almond milk) -buckwheat and mashed sweet potato with flat leaf parsley folded through Hopefully something resonates ;) .
