Cloud Bread I first discovered Cloud Bread while perusing Pinterest. Three carbs in a whole loaf? How could this be? What would it taste like? Too good to be true? The reviews varied wildly. I decided to find out for myself. I made my third batch in a week, this morning. Let that be an indication of much I LOVe this stuff! Heres an adapted recipe with my exact directions. Follow them closely for guilt-free eating. 3 ounces cream cheese, cold 3 eggs, separated 1/4 teaspoon cream of tartar (I use angel cream from the bulk food store) 1 packet Truvia/Stevia (optional - see my note below) Preheat oven to 325°. Spray 9-inch cake pan with non-stick cooking spray. Set aside. Separate eggs, making sure no yolk is mixed with the whites. Even a drop can ruin your recipe. In a mixing bowl, use electric beaters to combine the cream cheese with the egg yolks. beat until fully incorporated. Scrape into a small bowl; set aside. Wash beaters (and mixing bowl if using a Kithen-aid). The trick to baking successfully with egg whites is NO FAT on your utensils. Beat the egg whites and the cream of tartar on high, until peaks form. Using a rubber spatula, *gently* fold egg yolk mixture into whites. Do not stir. Gently scrape mixture into a cake pan. Keep it fluffy. Do not pat mixture down or your bread will be flat. Bake for 30 minutes. Top will be golden brown. Do not over bake. Remove from oven. The reviews I read called for an oven temp of 300°. My bread browned in 30 minutes at 325°. Other recipes also called for 1 packet Stevia/Truvia added to the egg yolk mixture. I made the first batch with it and forgot the second time. I used half a packet on this loaf shown. This recipe may be doubled and baked in a bread pan. Dont forget the non-stick spray. You can also make buns by baking on a cookie sheet. Calories can vary depending on the type of cream cheese you use. For nonfat cream cheese: 255 calories and 3 carbs Low fat cream cheese: 315 calories and 3 carbs Regular cream cheese: 345 calories and 3 carbs This calorie count is for the ENTIRE recipe. :D I cut mine into thirds for 3 servings. Thats 3 sandwiches. :D For the ultimate low-fat, low-calorie, low-carb anytime sandwich, I top mine with 2 slices cooked turkey bacon and 1 egg white. For each sandwich: 130 calories and 1 carb. Superb!
