 Coconut loaf Makes 1 loaf 125g butter, softened 100ml castor sugar 3 extra-large egg yolks 5ml vanilla essence 250ml cake flour 10 ml baking powder 1 ml (pinch) salt about 100 ml milk Topping 3 extra-large egg whites 100ml castor sugar 250ml desiccated coconut Method Cream butter and sugar together. Add egg yolks, one at a time, beating well after each addition, until light and creamy. Add essence. Sift flour, baking powder and salt together and add, alternately with milk, to egg mixture. Turn out into a greased 22 cm loaf pan. Topping: Beat egg whites until soft peak stage. Gradually add the sugar and beat further until stiff peak stage. Fold in coconut. Spoon on top of cake mixture. Bake in a preheated oven at 180 ºC for 30 minutes. Reduce oven temperature to 160 ºC and bake for another 15 – 20 minutes. Leave in pan for a few minutes before turning out onto a wire rack to cool completely.
