Coffee Cream Cheese Soufflé WHAT YOU’LL NEED **************************** 60 g cake flour 330g cream cheese 150ml whipping cream 2 Tbsp lemon juice 2 Tbsp instant coffee 60 g sugar 4 egg yolks (room temperature) 4 egg whites (room temperature) 2 Tbsp sugar confectioners’ sugar (for topping) strawberries (for topping) small baking dishes WHAT TO DO ****************** 1. Preheat oven to 300F/149 C 2. Shift cake flour and set aside. 3. In another mixing bowl, beat egg whites and 2 Tbsp of sugar until until stiff and glossy meringue forms. 4. In another bowl, add soften cream cheese and sugar then mix together with a spatula. Beat it well with a hand mixer until creamy. 5. Add whipping cream whisk well. 6. Add egg yolks one at a time and mix gently. 7. Add lemon juice and coffee extract ( 2 Tbsp of coffee + 1 Tbsp of hot water). – wet mixture 8. Combine wet mixture and flour 9. Add egg whites and carefully fold in with a rubber spatula. 10. After pouring the batter onto the small baking dishes put them in the roasting pan and slide it onto the oven rack. Fill a heat proof pitcher with hot water and slowly pour the water into the roasting pan – water bath 11. Bake at 300 F/149 C for 40 to 45 minutes and let it cool in the oven for 5 minutes
