Collard Wrapped Burrito Fresh collard green leaves Black bean puree or black beans Guacamole or mashed avocado Cilantro lime rice Fresh or carmelized veggies of choice Mexican spiced taco meat or shredded beef or pork or chicken or fish or tofu Shredded cheddar cheese or vegan alternate Fresh salsa Wash a full collard leaf. Trim down the stem. Use raw, or boil in hot water for 1-2 minutes to soften. Set aside to cool. Fill the center of the burrito with layers of your favorite burrito fillings, wrap and devour. I ate mine too quickly to photograph (thanks to Google images ).
