Comforting Chicken and Dumplings Print Prep time 15 mins Cook time 60 mins Total time 1 hour 15 mins A comforting chicken and dumplings for those cold and blustery days. Author: Pamela Braun Recipe type: Dinner Cuisine: American Serves: 6 Ingredients •For Chicken Soup •2 Quarts Chicken Stock (If using homemade stock, make sure to add 1 tablespoon of powdered chicken bouillon to your stock before making the actual dish of chicken and dumplings.) •1 Tablespoon Powdered Chicken Bouillon •3 Carrots (trimmed and diced) •2 Celery Stalks (trimmed and diced) •1 Large Onion (thinly sliced) •5-6 Skinless Chicken Thighs •For Dumplings •2 Cups All Purpose Flour •1 Tablespoon Baking Powder •1 Teaspoon Kosher Salt •4 Tablespoons Butter •1 Cup Whole Milk Instructions 1.For Chicken Soup 2.Pour the stock into a large pot and stir in chicken bouillon. 3.Add in the carrots, celery and onions. 4.Heat over medium high heat and bring to a boil. 5.Once it starts boiling, add in the chicken thighs and reduce to a simmer 6.Continue to simmer until meat comes off the bones easily (about 45 minutes). 7.Remove chicken from the soup and let cool slightly in a bowl. 8.Shred the meat and add it back to the soup. 9.For Dumplings 10.While the soup is cooking you can make up the dumpling batter. 11.Add the flour, baking powder and salt to a medium size bowl and mix with a fork for 2 minutes (this makes sure that all of the ingredients are thoroughly mixed). 12.Add the butter and milk to a small saucepan and bring to a simmer over medium low heat. 13.Once the mixture is simmering, remove from heat and pour into the flour mixture. 14.Stir with a fork or wooden spoon until everything just comes together. 15.Scoop out 1 tablespoon of the mixture and roughly roll it into a ball. 16.Set all the raw dumplings on a plate. 17.Once you have added the shredded chicken back to the soup, it’s time to add the dumplings. 18.Drop them into the soup and cover the pot with a lid. 19.Simmer for 10 – 15 minutes. 20.When you remove the lid, the dumplings will be nice and puffy. 21.Serve. Notes You will see that there is another tablespoon of the powdered bouillon in the chicken and dumplings recipe as well. Yes, you want to have a total of 2 tablespoons of powdered bouillon in this recipe. Add the first tablespoon to your stock (either homemade or store bought), then add another tablespoon when you are making the actual chicken and dumplings soup.
