Concord — “Eat coconut?” you ask. “Isn’t coconut high in saturated fat? Well, yes, it actually has more saturated fat than any other vegetable oil. But remember that not all fat (and not all saturated fat) is bad. Not only is coconut one of the best sources of good fats called medium-chain triglycerides (MCTs), which provide energy, but its fat is 50 percent lauric acid found in human breast milk, and known to have anti-viral, anti-fungal and anti-microbial properties. Lauric acid converts into monolaurin in the body, and monolaurin inactivates H. pylori, among other protective actions. Research in this era indicates that MCTs in coconut destroy pathogens in the body and disrupt bad bacteria’s ability to interact with cells they are trying to infect.
