Confession time: Just made pancakes from scratch for the first time in my life. I guess I thought there was some unknown rocket science to it and never considered it as an option, I always made them from the mix, and as a child I remember my mother using a premade mix as well. My youngest is in town and wanted pancakes for breakfast. I searched high and low and couldnt find the ready made pancake mix so I did a quick internet search. I found a recipe that seemed simple enough and checked the cabinets, I had everything I needed. These were the best pancakes ever. I will never make them from a box again, and frankly dont understand why people use the mix. I may have spent a total of three minutes longer than it would take using the ready mix, measuring out the ingredients.
