Continuing our traditional Christmas dishes tour around the world we are going to Peru where their traditional dishes start with roast turkey and/or pork, which are the prefered meats, however they may sometimes be replaced by chicken or duck. The turkey, considered to be the centerpiece of the celebration is surrounded by a variety of colorful and succulent side dishes. There is always a huge bowl of salad, baked sweet potatoes topped with marshmallows, or sweet potato puree, applesauce, which is not to be missed, and sometimes a quince puree as well. Though there may be differences in the meats and sides served, no Peruvian dinner is complete without one or more rice dishes. During the holidays, these must contain several colors and textures. They obtain this effect by adding fruits, vegetables, bacon, and more.
