Cooking for a dozen neighbors and family on the 4th. Prepped it all today. Just dry-rubbed several racks of ribs... dry rubbed and (strangely, as an experiment) -injected- three briskets with butter, garlic and Cajun spices for the smoker, made a gallon of bacon/mustard and boiled egg potato salad, large Gulf shrimp Cole Slaw... and will probably make some Andouille sausage beans, too. Would have done more meat, but I prepped all my smoker will hold at one time. ALSO made breaded pork chops, mashed potatoes, cream gravy and salad for dinner tonight. Full day.
