Cooking tip - pressing/ drying firm tofu, then marinating its cubes in lemon juice will make tofu taste very very close to paneer. If you marinate it well enough/ long enough, you almost cant tell. For recipes such as palak paneer, paneer tikka masala, shahi paneer, and other gravy and stir fried paneer recipes, you can add garam masala and garlic to the lemon juice marinade and pan fry the marinated cubes before adding to gravy (to cook the spices and garlic). As an ardent paneer lover and former avid paneer eater, I endorse this method wholeheartedly.
