Cooking with Quilley! Happy Hump Day! Hope everyone is having a beautiful Wednesday. No need to rush home and cook, here’s a quick yet delicious recipe from Quilley’s cookbook! Alfredo Florentine Chicken Panini 8 oz. Cream Cheese, divided 2 teaspoons olive oil 1 cup tightly packed chopped fresh baby spinach leaves 10 (1/2 inch thick) slices Calabrese bread (crusty Italian bread) 2 cups shredded cooked chicken 1/2 cup of 4 Cheese Italian Blended Shredded Cheese Directions 1. Heat Panini grill or a pan if there is no Panini Grill available. 2. Reserve 1/3 cup cream cheese. Heat oil in large skillet on medium heat. Add spinach; cook and stir 1 to 2 min. or just until wilted. Add remaining cream cheese, chicken and shredded cheese; cook and stir 5 min. or until chicken mixture is heated through and cheese is melted. 3. Spread chicken mixture onto 5 bread slices; cover with remaining bread slices. Spread outsides of sandwiches with reserved cream cheese. 4. Spray grill with cooking spray. Add sandwiches, in batches; cook 2 min. or until golden brown. How to Pull the Cooked Chicken: 1. Use 2 forks to pull the skinned and boned cooked chicken into shreds.
