Cowboy Candy 2lbs Jalapeno sliced 1/8 in. in thickness 2 c. granulated sugar 3/4 c. distilled vinegar 1/8 tsp. cinnamon Wash jalapenos and drain. Best to use half red and half green peppers. Wearing plastic gloves cut into ring shapes 1/8 in thickness or larger set aside. Using a sauce pan add sugar, vinegar and cinnamon over medium heat and bring to a boil until sugar has completely melted and it makes a syrup not to thick. Now add peppers into this mix and stir up and cook on low heat for 5 min. Using a slotted spoon remove peppers and pack into a pint jar. Now pour remaining sauce over peppers using a fork to remove air bubbles. Place on lid and let seal or put into the fridge and let sit 7 days before eating. Giving the peppers time to consume the sugar. When jar is emptied cut up cucumber slices and place into the jar to serve with cole slaw or with veggies. Enjoy.
