Cranberry Apple Cinnamon Rolls Prep time 4 hours 15 mins Cook time 20 mins Total time 4 hours 35 mins For the rolls: 3¼ cup unbleached all purpose flour 1 tsp. Alaea Hawaiian sea salt 3 tbsp. sugar 2½ tsp. (1 packet) active dry yeast 1 cup of milk at room temperature ¼ cup unsalted butter, melted and cooled For the filling: 1 stick of melted butter 2 tbsp. cinnamon 2 tsp. cardamom, optional 2 cups of fresh cranberries 1½ cups of diced and peeled apples 2 cups brown sugar For the frosting: 4 ounces of cream cheese at room temperature 2 tbsp butter also at room temp 2 cups of powdered sugar ¼ tsp. lemon juice Instructions Combine milk and yeast, stirring just enough to get the yeast wet and let it sit for about ten minutes. Add salt and stir, letting it rest for about ten minutes more. Add flour, sugar and butter to your bread machine then add the yeast mixture. Mix ingredients until you have a very slightly wet dough. It will feel tacky after you knead it for awhile by hand, mixer or bread machine. If you are using your bread machine, be sure that it is on the dough setting. If you are kneading by hand or using a stand mixer, knead for ten minutes. After ten minutes, dough should be slightly tacky and smooth. Lightly oil your bowl and let the dough rise until doubled in size for about 3 hours. Divide the dough into two equal parts. On a lightly floured surface, roll out one dough section into a rectangle. Brush ½ melted stick of unsalted butter onto the rolled dough and spread 1 cup of the brown sugar and sprinkle 1 tbsp. cinnamon and 1 tsp. of cardamom. Roll dough lengthwise and wrap in plastic wrap. Refrigerate for one hour. Repeat rolling process with the second half of dough. Remove first roll from the refrigerator and cut into equal pieces, placing into a greased pan, I use two 9 inch round pans for this recipe. Repeat with the second roll. Place a pan of hot water in the bottom rack of your oven with your oven turned off to keep the inside of your oven warm enough to rise your dough, but not hot enough to bake it. Place your cinnamon rolls into your oven for about an hour or until rolls are nearly doubled in size. Bake at 350 for 20 minutes if you want a soft roll, rotating the pans every ten minutes. Rolls will be slightly golden brown on the top. The number of rolls will vary depending on how thick you cut them. Combine powdered sugar, cream cheese, butter and lemon juice until it reaches the consistency of a thick but spreadable frosting . Allow rolls to cool, spread on frosting while still warm.
