Crawfish Beignets Filling ½ cup chopped finely onion ½ cup chopped finely celery 1/3 cup butter 1 clove minced garlic Seafood seasoning to taste 1lbs chopped crawfish tail meat ¼ cup shredded sharp cheddar cheese ¼ cup swiss cheese 1&1/2 tbsp chopped finely green onion top 1&1/2 tbsp parsley Cooking oil Sauté onion and celery in butter until tender… Add garlic, seasoning, and crawfish… Let simmer 8-10 minutes or until liquid has been absorbed… Set off to the side and let cool completely… Then add cheeses, green onion, and parsley, stir a little bit… Get pastry ready now… Pastry Canned biscuits Using canned biscuits… Roll out biscuits flat… Spoon mixture on onehalf of a side of dough… Fold over and seal dough edges… Deep fry at 350* until golden brown… You may also use shrimp instead… You may also make and freeze these too…
