Crockpot Vegetarian Chili 1 large onion, chopped 1 clove garlic, minced 2 15 oz cans black beans, drained and rinsed 2 15 oz cans red kidney beans, drained and rinsed 2 15 oz cans pinto beans, drained and rinsed 2 15 oz cans diced tomato and green chile 1 15 oz can tomato sauce 1 packet chili seasoning 1 14 oz package frozen corn Cilantro, lime juice, sour cream for garnish Place all ingredients except corn and garnishes in crockpot. Cook on high 2-3 hours or low 4-6 hours...add corn the last hour of cooking. Makes 10 servings - about 1 and 1/3 cup per serving! Can freeze for quick lunches!!
