Crunchy Picnic Cookies 1 cup butter, softened 1 cup sugar 1 cup brown sugar, packed 1 egg 1 cup oil 1 teaspoon vanilla extract 3-1/2 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup oatmeal (I use quick cooking) 1-1/2 cups crushed Honey Bunches of Oats with Almonds 1-1/2 cups coconut 1 cup chopped pecans or walnuts 1/2 package toffee bits Cream butter and sugars; add egg and beat well. Add oil and vanilla, mix well. Set aside. Combine flour, soda and salt; add to creamed mixture and mix well. Stir in remaining ingredients. Shape into 1-inch balls and roll in sugar. Place on parchment lined cookie sheets and flatten with a fork (criss-cross pattern). Bake at 325 degrees for 15 minutes or until golden brown and set. Cool on wire racks. Makes 5 dozen.
