Cumin and Pea Pulao Also spell as pulav, pilau or pilaf - its a method of cooking rice by absorption method where whole spices are use for tempering. Pulao is normally made by using long grain rice like basmati variety, this rice contains less starch and make rice fluffier with each grain separated. By the rule of thumb, proportion of rice to water is generally 1:2 although it varies from rice to rice. I start with little less water than usual and add on some hot water as I needed.
