Curry Chicken Salad 2 cups chopped chicken breast 1 1/4 cups halved seedless red grapes 1/2 cup thinly sliced green onions 1 tbsp dried cranberries 2 tsp curry powder 1/4 cup mayonnaise 1 tsp honey 1/2 tsp lemon juice 1/8 tsp salt 1/8 tsp black pepper 1/3 cup sliced almonds Combine chicken, grapes, onions, and cranberries in a large bowl. Stir curry powder in a small skillet over medium heat for 30 seconds or until fragrant. In a separate bowl, whisk curry powder with mayonnaise, honey, lemon juice, salt and pepper. Pour mayonnaise mixture over chicken mixture and toss gently to coat. Cover and chill. Toast almonds in a skillet for 3-5 minutes or until lightly browned, cool. Stir almonds into salad just before serving. Light mayonnaise can be substituted for a low-fat version.
