DAY 18 Recipes. (January, 18th) Breakfast: Peanut butter yogurt smoothie Combine the following ingredients into a blender then enjoy 1/2 cup of both fat free milk and fat free plain yogurt, 2 tbsp of creamy peanut butter, 1/4 of a very tile banana, 1 tsp of honey, and 4 ice cubes Morning snack: reduced fat free chocolate pudding Lunch: Veggie Tacos Stiff taco shells with rinsed and drained black beans, shredded lettuce, Pico de Gallo or salsa, shredded cheese, hot peppers (optional) and low fat sour cream Afternoon snack: Zucchini fries Slice zucchini into thin fry size strips about 1/4 inch or less in thickness Preheat oven to 400 Prepare work station. Need 3 bowls. Bowl one: place a half cup of flour. Bowl 2: place 1 cup of either egg substitute or egg whites. Bowl 3: bout three cups of Pablo bread crumbs. Dip each slice in the exact order, flour, egg wash, then breadcrumbs until each are covered. Then place on a baking sheet covered with either parchment paper or aluminum foil. Spray the top covering with cooking spray and reduced sodium of grated parmesan cheese. Bake in oven for about 25 to 35 minutes or until golden brown. Serve will marinara sauce Dinner: Lemon Shrimp & Pasta Take 12 oz of peeled, deveined, and thawed shrimp rinse and pat dry. Finely chop 1 teaspoon of lemon peel, and juice from the lemon and place both aside. Cook pasta as directed. In a another hot skillet saute 3 cloves of minced garlic, and 2 whole chopped medium size onion for s minute. Next add shrimp and cook until shrimp is pink. Then add spinach, lemon peel zest, lemon juice, drained pasta noodles, salt, pepper, to taste. The shrimp can be substituted for chicken as well Evening snack: your choice. ( however remember your proportions)
