DUM PUKHT MUTTON: INGREDIENTS: Lamb mutton 1 kg with fat potatoes 1 kg (cut into slices of about 1 inch thick butter 100 gm black pepper powder 1 tea sp salt as per taste lemon 1 black pepper whole 4 to 5 cinimom stick 2 cloves 2 MARINATION METHOD Take mutton in a large bowl ,add juice of 1 lemon and a little salt. Keep it for at leat three to four hours or maximum overnight. METHOD FOR COOKING: Now take a non-stick wok or pan and grees well with butter, arrange slice potatoes on the surface of the pan. now put marinated mutton on it and sprinkle blck pepper powder, and salt according to your taste. also add all the whole spices over mutton. Now cook it for almost two to three hours on a very low heat, and cover the utensil with thick paste of flour so that steam cannot be aired, however left one small part of the lid without paste so that some of steam can be aired. Complete air tight utensil is very dangerous becoz it can burst and any injury may happen. Plz do try it at least once, and you ll cook it again and again as I m doing becoz its the yummiest.
