Darn, Internet... I was looking through some interesting stuff and found this link... Now I have something else I want to build. I know a deer that needs smoking! When I was a little kid 60 years ago, my Grandfather had a big smokehouse. Every Thanksgiving they killed 10 hogs and sugar cured hams, shoulders, ribs, and bacon, then smoked them. The other 5 were ground into whole hog sausage and sold to pay for buying 10 baby pigs next spring, fattening the hogs, and making a little profit. The 5 smoked hogs fed the family and their extended family for a year. Every time I fire up my little charcoal smoker and put some hickory, apple, or mesquite chunks on, the smell takes me back to my childhood.
