Date and Banana muffin recipe The twins couldnt wait once they were out and gobbled them up with every hot mouthful.. Makes 12 1 cup self raising flour 1/2 cup agave nectar* 150g butter softened 2 teaspoons vanilla essence 2 eggs 1/2 cup mashed banana 6 fresh dates halved lengthways and de-piped Preheat oven to 180degrees. Line a 12 hole muffin pan with cases. Place flour, nectar, butter, vanilla, eggs and banana in a large bowl and beat for 3 minutes with an electric beater. Spoon into cases and press half a date into each one. Bake for 15-20 minutes until cooked through and golden. (It took 20 in my oven). Serve warm or room temp. Their texture is a little softer than it would be with sugar but taste wise so yummy. *agave nectar is a natural nectar from the agave plant found in Mexico, similar looking to a cactus plant. It is a natural sweetener.
