Day 23: Well, we survived the 21 days! Actually, it wasnt as hard as I thought it would be. We are actually eating some of the most delicious meals! The only real challenge, for me, has been breakfast (well that, and eating out was....ya know...interesting :-)). The protein shakes just dont seem to agree with me, so Im still exploring breakfast ideas. (I found some instant organic oatmeal at Ingles the other day, so Im trying that with a couple of Tbl. each of flax meal and coconut oil. Pretty yummy, but Im still not sure this is the answer. Stay tuned...:-)) Even though we were only planning to go the 21 days without the 7 foods we took out, Ivy and I have decided to continue without any of the 7 foods for a few more weeks, to give our bodies more of a chance to heal. Yet, after only three weeks, we are both already feeling so much better! So....some of you are wondering what was supposed to happen after the 21 days, and WILL happen when we are ready. If you are still wondering, read on. Well, at this point, we were supposed to start adding some stuff that we eliminated back into our diet, one each week, to see how it affects us.....with the exception of the unhealthy stuff...(like refined sugars and artificial sweeteners (we can have Stevia, Xlitol or Erythritol. Check out this link with more information about these: authoritynutrition/4-healthy-natural-sweeteners/), corn and soy (most of which is GMO. which = BAD!) and peanuts (peanuts are not really nuts, and they are loaded with mold that produces aflatoxin. Aflatoxin is a known carcinogen associated with liver cancer)). I hear ya...youre asking whats left, right? We can add back gluten (whole grains only), dairy (organic, free range), eggs (organic free range) and try a little healthy non-GMO soy, like fermented soy (you are only trying this to see how your body reacts and if you can have small amounts occasionally, because a lot of soy will mess up your hormones, even if it is non-GMO and organic). We will add back one of these at a time, for 4 days and then take it back out for 3 and see how we feel (the thought is that it can take up to 3 or 4 days to feel the effects). Then we take on the next thing. We try them out one at a time. When we have tried to add back all of them, then we know which ones we are sensitive to (by how our body feels) and which ones are fine. (Weve still got our fingers crossed that dairy and eggs will be ok!:-))
