Food: morning drinks as per Day 1 Breakfast: Vanilla and Peach smoothie Blend together 1 frozen peach, 150g of Total 0% fat Greek Yoghurt, ½ tsp vanilla paste, ½ tsp sugar substitute, ice and 100ml of water. Or Messy Eggs Pan fry 6 cherry tomatoes, ½ chilli, handful of spinach in few sprays of olive oil. Add two whole organic eggs and scramble together. Serve with chopped flat leaf parsley or coriander (optional) Snack: 1 Crispbread topped with cottage cheese, salt and pepper Or 12 almonds and 1 apple Lunch To cook: Smoked mackerel pate and crudités Blend 2 smoked mackerel fillets, juice of ½ lemon, ¼ cup of 0% fat Greek yoghurt, ¼ cup of low fat cream cheese, pepper. Stir in chopped flat leaf parsley. Single portion is ½ cup, served with generous crudités of cucumber, red and yellow peppers, celery and sugar snap peas. Or To buy:6 pieces of sashimi for ladies, 6 pieces of sushi for men plus edamame beans. Add miso soup if you wish Or For Vegetarians: Homemade red pepper hummus and crudités Add one pot of reduced fat hummus to blender. Add 1 x chopped red pepper and 1-2 tsp of Tobasco (optional) and blend. Stir in ¼ cup of chic peas and chopped parsley. Single portion is ½ cup, served with generous crudités of cucumber, red and yellow peppers, celery and sugar snap peas. Snack: ½ Hazelnut and Chocolate Bar Or ¼ cup of Edamame Beans with Malden Sea Salt (Birds Eye beans are perfect) Supper: Chilli Beef Stir Fry Stirfry lean strips of steak (100g) in ½ tbsp. groundnut oil, grated ginger and garlic. Add red pepper, mange tout, tenderstem broccoli and young leaf spinach. Season with 1 tbsp reduced salt soya sauce. Or Samui Skinny Soup – Vegetarian Option Simmer lemongrass and ginger in good vegetable stock for 5 mins. Remove. Add mange tout, red peppers, oyster mushrooms, tenderstem broccoli, 2 tbsp of edamame beans, 2tbsp chopped firm tofu, chilli, and 1 tbsp of reduced salt soya sauce (optional). Garnish with chopped coriander or Thai basil Or Phat Free Phuket Chicken Pan fry in ½ tbsp. groundnut oil minced chicken or finely chopped chicken breast. Add 1 clove garlic, 1 tsp grated ginger, 3 inches cubed cucumber with seeds removed, finely chopped sugar snaps, chopped bok choy and cook gently until tender. Stir in chopped coriander or thai basil and serve on bed of wilted spinach
