Dear Anita, as per your wish; here you go: This is a mix of Dr. Oz and Rachel Rays egg muffins. Got best from both. Egg yolks contain a host of nutrients including vitamins A, D, E, B12 and K. With the protein punch found in quinoa and eggs youll easily curb cravings and stay full all morning. Bonus: you can make a batch at the beginning of the week and store in the refrigerator for an easy heat-and-eat breakfast during the work week. Ingredients 1 cup cooked quinoa 2 whole eggs 1 cup diced veggies of your choice (I put 1 big red organic capsicum) 4 egg whites Spices of your choice (I put salt, pepper, fire roasted tomatoes, fresh cut parsley) Topped with mexican cheese blend Directions Preheat oven to 350°F. Coat muffin tins with cooking spray. Combine ingredients and pour mixture into tins. Bake for 20-25 mins. Turned out lovely. My daughter loved them.
