Dear chefs and persons from the front of house. I am looking for potential candidates to join my team in my most anticipated opening of my fine dining restaurant scheduled to open in March 2014. The concept would be based on a chefs table with a daily changing ala carte(no degustation for the beginning),NO pork served, emphasis on wine-food pairing, only dinner service, 45covers per service. Closed on monday. The team i am trying to put together would be the following positions:- -Chef de partie(must have expierence in fine dining ala carte/degustation),fish, meat and garde manger section. -Maitre dhotel-master of service(with expierence in fine dining service) with a warm and pleasant personality, has a fair bit of knowledge about wine. -Head sommelier(must have knowledge about french wines(regions, grape varieties), wine-food pairing) and has a significant amount of expierence in a fine dining establisment.
